Ingredients:

  1. Wheat flour 1 cup
  2. White flour (maida) 1 cup
  3. Salt 1 tsp
  4. Sugar 2 tbsp
  5. Water 1/2 cup
  6. Oil 4 cup (for fry)

Procedure:

Sift flours and salt together.
Add the flours, salt and 3 tbsp oil in a bowl.
Rub the oil with flour with your finger tips.
Add the water to form soft dough.
Knead it for 10-12 minutes, until it became smooth.
When it gets ready oil this dough with two tsp of oil and cover it with a clean cloth and keep in fridge for 1 hour.
After 1 hour, make small balls from this dough and cover with a wet fabric.
Flatten a ball and roll it out into a 5 inch round disk.
Pour oil in deep frying pan and hot it on high flame.
Drop one pori in hot oil.
It’ll sink to the bottom of the pan but it’ll rise with in 2 seconds over the surface of oil.
Press the pori with the back of a slotted spoon.
Within 6-7 seconds the pori will puff up.
Turn its side and cook for 10-15 seconds.
It’ll get ready with in 1-2 minutes.
Transfer it on a paper towel.
Serve with curry or halwa.

Preparation Time: 1 hour
Frying Time: 3 minutes each pori

Tip: Always use a pepper towel to put fried pori because it has too much oil and pepper will soak its extra oil.
