Ingredients:

  1. Peas 1/2 cup (boiled)
  2. Cucumber 1 (diced)
  3. Potato 4 (boiled)
  4. Green bell pepper 1 (chopped)
  5. Green chili 2 (minced)
  6. Tomato 2 (chopped)
Dressing:
  1. Lemon juice 1/4 cup
  2. Fennel seed 1 tbsp
  3. Parsley 2 tbsp (chopped)
  4. Salt 1/4 tsp
  5. Dry red chili 2 (crushed)
  6. Olive oil 1 tbsp

Procedure:

Cut potatoes in small blocks.
Mix all vegetables in a bowl, cover and keep in fridge.
In a pan heat the olive oil.
Add all spices written under dressing section, except lemon juice.
Stir and simmer for 2 minutes over medium flame.
Add lemon juice, mix well and cook for 2 minutes over medium flame.
Let it cool for 5 minutes and pour over the mixed vegetables.
Mix well and serve.

Cooking Time: 30 minutes
Chill Time: 15 minutes
