Ingredients:

  1. Onion 1
  2. Peas 1 cup
  3. Potato 2
  4. Carrot 1
  5. Bell pepper 1
  6. Green chili 4
  7. Green coriander 1/2 cup (chopped)
  8. Ginger 1 tbsp
  9. Lemon juice 2 tbsp
  10. Salt 1 tsp
  11. Red chili powder 1 tsp
  12. Turmeric powder 1/2 tsp
  13. Spice (garam masala) powder 1/2 tsp
  14. Cumin seed 1 tsp (roasted)
  15. Oil 4 tbsp

Procedure:

Wash, peel and cut potato, carrot, bell pepper, onion, green chili and ginger length wise.
Take a sauce pan and heat the oil.
Fry cumin seeds until splutter and add onion, fry it until became brown.
Add ginger and all dry ingredients, fry for 2-3 minutes over low flame.
Add all vegetables except green coriander mix well and add 1 cup water.
Cook over high flame, when water became rolling boil turn the flame to low and cover the lid.
Cook for 15 minutes, stir occasionally.
After 15 minutes, add coriander and lemon juice, stir well, cover the lid and cook for 3 minutes.
Serve it with paratha or boil rice.

Note: If more water needed to cook vegetables you can add more.
