Ingredients:

  1. Rice 2 cup
  2. Egg 4 (hard boil)
  3. Egg 3 (for omelet)
  4. Onion 1 (chopped)
  5. Tomatoes 2 (chopped)
  6. Green chili 6 (chopped)
  7. Green coriander 1/2 cup (chopped)
  8. Soya sauce 2 tbsp
  9. Chili sauce 2 tbsp
  10. Vinegar 2 tbsp
  11. Salt 2 tsp
  12. Cumin seeds 1 tbsp
  13. Spice powder 1 tsp
  14. Milk 4 tbsp
  15. Oil 6 tbsp

Procedure:

Wash and soak rice in double quantity water.
In a bowl add milk, 1/2 tsp salt, 1/2 tsp red chili, turmeric powder 1/2 tsp, onion and 4 eggs.
Beat until fluffy.
In a frying pan add oil and make omelet from it.
When it cooked from both sides cut it in pieces and keeps aside.
Take sauce pan and heat the oil.
Add tomatoes and cook for 4-5 minutes over low flame.
Add all other ingredients, simmer for 3-4 minutes.
Drain rice and add in sauce pan.
Stir and simmer over medium flame for 5-6 minutes.
Add 4 cup water.
Cook over high flame, stir occasionally.
When water dry up, sprinkle green coriander, omelet and boiled eggs.
Mix once and cover the lid.
Cook over low flame for 7-8 minutes.
Remove the cover and mix the rice.
Transfer in serving dish.
Serve with raita.
