Ingredients:

  1. Brinjal 1/2 kg
  2. Onion 1 (chopped)
  3. Ginger 1 tbsp (chopped)
  4. Tomato 2 (puree)
  5. Green coriander 1 tbsp (chopped)
  6. Green chili 4 (minced)
  7. Salt 1/2 tsp
  8. Dry red chili 6 (crushed)
  9. Turmeric powder 1/2 tsp
  10. Spice (garam masala) powder 1 tsp
  11. Cumin seed 1 tsp
  12. Oil 4 tbsp

Procedure:

Wash and cut the brinjal in slices and dip in cold tap water.
Heat the oil in sauce pan.
Fry onion, cumin seeds and ginger until light brown over medium flame.
Add the brinjal and simmer continuously.
Add tomato puree and all the dry ingredients.
Cook it until tomato puree dry up.
Add 1/2 cup water, cover the lid and cook over medium flame for 10 minutes.
When brinjal became soft and water evaporated, mash with wooden spoon and mix well.
Sprinkle green chili and green coriander.
Cover the lid and cook over low flame for 5 minute.

Note: When you cut the brinjal, dip them in plenty of water other wise they’ll lose their freshness and color.
