Ingredients:
- Green bell pepper 2
- Brinjal 2
- Tomato 2 (chopped)
- Salt 1 tsp
- Red pepper 1 tsp
- Turmeric 1 tsp
- Lemon juice 1 tbsp
- Oil 4 tbsp
Procedure:
Remove the seeds of pepper and cut in cubes.
Wash and cut the brinjal length wise.
In a sauce pan, add oil and heat it.
Add tomato puree and cook until its water dry.
Add dry ingredients and brinjal, mix well.
Add 1/2 cup water, cover the lid and cook for 10 minutes over low flame.
Then add green bell pepper and lemon juice.
Mix well and cover the lid.
Cook for 6 minutes more until water evaporated.
Serve with rice or roti.
Preparation Time: 15 minutes
Cooking Time: 25 minutes
