Ingredients:

  1. Brinjal 2
  2. Onion 1 (sliced)
  3. Ginger paste 1/2 tsp
  4. Garlic paste 1/2 tsp
  5. Salt 1/2 tsp
  6. Black pepper powder 1/2 tsp
  7. Turmeric powder 1/2 tsp
  8. Cumin seed 1 tsp
  9. Peanut 1/2 cup (roasted)
  10. Milk 1/2 cup
  11. Vinegar 2 tbsp
  12. Oil 4 tbsp

Procedure:

Remove the skin of brinjal and cut in thin slices length wise.
In blender, add peanuts and milk, grind until it became smooth paste.
In a sauce pan add oil, fry onion until became pink.
Then add ginger and garlic paste and fry for 2 minutes.
Add the slices of brinjal and simmer for 3-4 minutes.
Add all dry ingredients and mix well.
Add the peanut paste and mix well.
Cover the lid and cook for 10-15 minute over low flame or until milk evaporated and brinjals became cooked.
Add lemon juice, mix well and cook for 2 minute more.
Serve it with boil rice or paratha.

Preparation Time: 15 minutes
Cooking Time: 30 minutes
